Pina Colada Jell-O Salad

I think I could start a blog segment called: I don't even like Jell-O. Because ordinarily, I don't, not on its own that is. But man, I am having fun with Jell-O recipes! My current favorite (by which I mean, I've made this going on 4 times in a row now, all in different variations, just so my fridge is never EVER without it!) is this cottage cheese Jello-O fruit salad!
I grew up eating this on 4ths of July, my mom made it with Orange jell-o, pineapple & mandarin oranges and it's pretty much amazing! Lately, though, I've been varying my jello and fruit flavors and the results are pretty fabulous! Here's the combo I tried today!
You Need:2 Tubs Cool Whip (I use light hoping to counteract the obscene amt. of this stuff I've been gobbling down)
1 Lg. or two regular size Jell-O boxes-today's flavor=pina colada!
1 Tub Cottage Cheese (I've been using fat free and it's fine!)
2 Cans Pineapple Tidbits (per the instructions on all Jell-O boxes I've seen, you can't use fresh pineapple, if you do, your jell-o is doomed!)
Directions:
1.) Dump the cottage cheese into a large bowl, add your jell-o powder and mix well.2.) Fold in Cool Whip3.) Drain fruit and add to mixture4.) Transfer to a refrigerator container and cover and chill for several hours!
5.) Enjoy!

**Update: this never did set up completely, maybe it's the light cool whip or the too much pineapple, it was still delicious, but this version is probably more of a mousse. My favorite combo so far is raspberry jello and one can each of mandarin oranges and pineapple, it sets good and is also amazing!
